This simple and light salad mixes fresh flavors with a citrus vinaigrette that is just right
for a Summer dinner. Grilling the watermelon brings a warm flavor that pairs with the
dressing and feta perfectly.
Ingredients:
- 6 cups Arugula; washed
- ⅔ cup Feta cheese crumbled
- ¼ of a watermelon; cut in large slices about 1 inch thick
- Vinaigrette
- ¼ cup fresh squeeze orange juice
- ¼ cup fresh squeeze lemon juice
- 1 tablespoon honey
- ⅓ cup shallots; sliced very thin
- ½ cup olive oil
- Salt and pepper to taste
Instructions:
- Slice watermelon into large 1 inch slices. Place on grill on medium heat for 4-5 minutes. Flip on opposite side for another 4 minutes. Remove from heat.
- While watermelon is on grill, juice the lemon and orange into a bowl. Add honey, shallots, salt, and pepper and whisk well. Slowly pour the olive oil into the mix while whisking vigorously until all is well incorporated.
- Dice grilled watermelon into small cubes, about ½ inch.
- In a serving bowl, add arugula, crumbled feta, and watermelon. Drizzle vinaigrette and toss until desired. Enjoy!
